Instant Oatmeal Bread

So I had a crazy amount of instant oatmeal lying around, and after eating it for dinner 4 days in a row, I’d had enough (what can I say? It’s college). So instead of shoving it under my bed along with the instant grits, Ramen, and piles among piles of Nilla cookies, I looked up a recipe to make something out of it after a friend mentioned a bread she made once using instant oatmeal.

Thinking I’m Princess Fatass of Fatassia right about now? Well you’d be right. I’m lucky I inherited my mother’s crazy fast metabolism.

Anyway-the recipe. This is the one I ended up using, and it came out quite nice:


* 5 packets instant oatmeal (I use Better Oats Apples and Cinnamon)
* 1/4 cup whole wheat flour
* 1 tsp baking powder
* dash salt
* 1 tsp vanilla extract
* 2 eggs
*peanut butter (optional)
* 1.5 mashed bananas


Combine all ingredients, pour into sprayed loaf pan, put into preheated 350 degree oven for 20-25 minutes. Drizzle with peanut butter, if desired.
